Calphalon's own 3ply nonstick coating makes cooking a breeze, you don't even need to use fats or oils, but if you can we receommend it because it will great enhance your foods flavor. The nonstick surface is guaranteed not to chip or peel, but be sure to use nylon, plastic or wood utensils to avoid scratching. Clean your Commercial Nonstick with a "Dobie" pad (nylon mesh covered sponge) and warm sudsy water, the exterior only can be cleaned with Comet/Ajax and a scotchbrite pad.
